  • 1 medium onion, sliced
  • 1 small green pepper (1/2-inch slices)
  • 1/3 c. oil
  • 1 clove garlic, finely chopped
  • 1 small eggplant, peeled and cut into 3/4-inch pieces
  • 1/4 c. V-8 or tomato juice
  • 2 medium tomatoes, cut in 1/8ths
  • 1 medium zucchini, cut in 1/2-inch slices
  • 1 tsp. each: basil and parsley flakes
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
