  • 1 medium eggplant, peeled and finely chopped
  • 1 zucchini, chopped
  • 14 cup sun-dried tomato packed in oil, drained and chopped
  • 1 yellow bell pepper, finely chopped
  • 1 medium red onion, finely chopped
  • 1 garlic clove, crushed
  • 14 cup fresh cilantro, chopped
  • 3 tablespoons fresh basil, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 12 teaspoon salt
  • 14 teaspoon pepper

    Combine all ingredients in slow cooker.

    Cover and cook on LOW for 6-7 hours, or until veggies are tender.
