- 2 large zucchini, sliced 1/8-inch thick
- 2 large yellow summer squash, sliced 1/8-inch thick
- 2 large onions, cut in slivers
- 1 (20 oz.) can stewed tomatoes
- 1/2 c. water
- 2 garlic cloves, minced
- 1/8 tsp. crushed red pepper
- salt and pepper
- freshly grated Romano or Mozzarella cheese
Directions

1Pour stewed tomatoes, water and spice in a large pot with garlic, pepper and crushed red pepper.

2When mixture comes to a boil, stir in onions, zucchini and yellow squash.

3Stew (boil) for 2 hours, stirring every 15 minutes.

4Serve in individual bowls; garnish with freshly grated cheese.

5Makes 6 to 8 servings.
