- 1 large onion, chopped
- 1/4 c. olive oil
- 2 zucchini, cut in 1/4-inch slices
- 2 medium garlic cloves, minced
- 2 large green peppers, sliced
- 1 eggplant, peeled and cubed
- 4 tomatoes, peeled, seeded and chopped
- 1/8 tsp. basil
- 1/8 tsp. oregano
Directions

1Saute onion in olive oil until transparent (do not brown). Add remaining ingredients.

2Cover and cook over medium heat for 45 minutes, stirring occasionally.

3Add some water if needed.

4For serving, you can top this with ripe olives, sliced crumbled bacon, or grated Parmesan.

5Delicious hot, but also good cold.
