- 2 to 3 onions, sliced or diced
- 2 to 3 peppers, sliced or diced
- 1 whole eggplant
- 2 to 3 small zucchini
- 1 pt. mushrooms
- 1 can crushed tomatoes
Directions

1Peel and cube zucchini and eggplant.

2Place in salt water overnight.

3Saute garlic, onions and peppers in a small amount of oil.

4Add the rest of the ingredients and allow to simmer for an hour or two.

5Serve alone as soup or over pasta as sauce.
