- 4 green peppers, julienned
- 2 1/2 c. peeled, diced eggplant
- 3 c. zucchini, cut in 1/2-inch slices
- 2 c. peeled, seeded and quartered tomatoes
- salt and pepper
- 1 tsp. basil
Directions

1Saute onion and garlic in olive oil, combine with next 4 ingredients.

3Cover; simmer 35 to 45 minutes, uncover and continue to heat 10 minutes.
