Ravioli Salad

Ingredients

  • 1 pkg. (1 lb.) lg. cheese ravioli
  • 1 sm. onion, thinly sliced
  • 1/2 yellow bell pepper, chopped
  • 1/2 orange bell pepper, chopped
  • 1 lg. tomato, chopped
  • 1/2 cup basil olive oil
  • 1/4 cup seasoned rice wine vinegar
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tbsp. minced fresh basil leaves
  • 2 tsp. fresh oregano leaves
  • 1/2 tsp. crushed fresh thyme leaves
  • Salt and pepper, to taste

Directions

    Prepare ravioli according to package directions.

    Chill in refrigerator about 1 hour.

    In a large salad bowl, combine ravioli, onion, bell peppers, tomato, oil and vinegar, Parmesan, basil, oregano and thyme.

    Toss lightly.
