  • 2 1/2 cups shredded carrot
  • 1 cup pitted dates
  • 1 cup walnuts
  • 1/2 cup unsweetened shredded coconut
  • 1 teaspoon cinnamon
  • 1/8 teaspoon grated nutmeg
  • 1 pinch salt
  • 1 pinch salt

Directions

    In a processor, mix carrots, dates, walnuts, coconut, cinnamon, nutmeg and salt. Fill with 8x8 cake pan lined with parchment paper. Chill in fridge.

    Process cream ingredients until very smooth. Pour cream on top of cake and freeze for 2 hours.

    Let it thaw for 10 mins before slicing with sharp/hot knife.

    Top with walnuts and cinnamon.
