- 6 large scallops
- 1 cup basil
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1/2 small garlic clove
- 1/4 cup Parmesan
- salt and pepper
- Toasted pine nuts (optional)
Directions

1Slice 6 large scallops into thin rounds and put them on a plate.

2Put 1 cup basil in a food processor with 1/4 cup olive oil, 1 tablespoon lemon juice, 1/2 small garlic clove, 1/4 cup Parmesan, salt and pepper.

3Process, stopping to scrape the sides of the bowl, until smooth.

4Spread the pesto over the scallops.

5Garnish: Toasted pine nuts (optional).
