  • 6 large scallops
  • 1 cup basil
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1/2 small garlic clove
  • 1/4 cup Parmesan
  • salt and pepper
  • Toasted pine nuts (optional)

    Slice 6 large scallops into thin rounds and put them on a plate.

    Put 1 cup basil in a food processor with 1/4 cup olive oil, 1 tablespoon lemon juice, 1/2 small garlic clove, 1/4 cup Parmesan, salt and pepper.

    Process, stopping to scrape the sides of the bowl, until smooth.

    Spread the pesto over the scallops.

    Garnish: Toasted pine nuts (optional).
