- 2 lb. ricotta cheese, softened
- 1-1/2 lb. cream cheese, softened
- 2/3 cup sugar
- 3 lg. eggs, beaten
- 1 tsp. vanilla
- 1/2 box graham cracker crumbs
- 1/4 lb. unsalted butter, softened
Directions

1Crust: Put Graham cracker crumbs in a large bowl.

2Knead in 1/2 stick of butter.

3Press onto bottom of 9-inch prepared springform pan.

4Chill for about 15 minutes before filling.

5Filling: Dust off the blender.

6Drop in 1 tub of ricotta (16 oz.

7), 1 brick of cream chesse (12 oz.

8), 1/2 tsp.

9vanilla, 1/3 cup sugar, 2 eggs and 1/4 stick of butter.

10Blend until smooth.

11Pour gently on top of crust.

12Repeat for second half of ingredients.

13Bake at 325F.
