- 3 lbs red potatoes (cut into chunks)
- 1 cup sour cream
- 4 ounces cream cheese (cubed)
- 14 cup evaporated milk
- 2 tablespoons butter
- 1 cup fresh mushrooms (sliced)
- 2 tablespoons fresh thyme (chopped)
Directions

1Boil potatoes in enough water to completely cover.

2Boil for about 15mins or until potatoes are tender.

3Drain potatoes, & return to saucepan.

4Add sour cream, cream cheese & milk.

5Mash potatoes to desired consitancy & spoon into microwavable serving bowl & cover with plastic wrap.

6Refrigerate until ready to use.

7Vent plastic wrap by poking a few holes in te top.

8Microwave on high 6-8mins or until heated through.

9Microwave uncovered an additional 2-3mins or until heated through.

10Sprinkle with thyme.

11Saute mushrooms in butter and serve over potaotes -- yyyuuummmmmmyyyy!
