- 1/4 c. confectioners sugar
- 1/4 c. superfine granulated sugar
- 1/3 c. rice flour
- 1 2/3 c. unbleached flour
- 1 c. butter (room temperature)
Directions

1Heat oven to 325°.

2Mix confectioners sugar and granulated sugar in a small bowl.

3Mix the flours together in a separate bowl.

4In a large bowl, thoroughly cream butter and the sugar mixture.

5Gradually add the flour mixture.

6Mix with your hands until the dough is smooth.

7Do not overwork.

8Roll out to 1/2-inch thickness.

9Prick with a fork.

10Cut into 2 inch squares.

11Bake on ungreased cookie sheet until medium brown, about 25 minutes.
