- 6 potatoes
- 1 cube butter or margarine
- 1 c. sour cream
- 1 egg
- 6 slices bacon, cooked and crumbled
- 1 Tbsp. chives
- salt and pepper to taste
Directions

1Bake (do not foil wrap) 450° approximately 1 hour or until done.

2If serving whole potato, cut section off side; if serving 1/2 potato, cut in half lengthwise.

3Scoop out, leaving just enough to keep skin firm.

4Beat all ingredients together to desired consistency and fill skins.

5To serve, reheat approximately 1/2 hour before serving, or until hot throughout.
