Red Bean Soup

  • 1 lb. red beans
  • 1/2 lb. pork or ham
  • 1 sprig thyme, parsley and celery
  • 1/4 c. canned tomatoes
  • 8 c. water
  • 1 medium sized onion
  • 1 tsp. salt
  • 1 firm plantain

Directions

    Wash beans and soak overnight.

    Boil for 2 hours in water which beans are soaked.

    Add all ingredients except plantain.

    Add plantain after beans are soft.
  5. 5
    Add dumplings and cook 10 minutes longer.
