- 1 lb. red beans
- 1/2 lb. pork or ham
- 1 sprig thyme, parsley and celery
- 1/4 c. canned tomatoes
- 8 c. water
- 1 medium sized onion
- 1 tsp. salt
- 1 firm plantain
Directions

1Wash beans and soak overnight.

2Boil for 2 hours in water which beans are soaked.

3Add all ingredients except plantain.

4Add plantain after beans are soft.

5Add dumplings and cook 10 minutes longer.
