- 1 lb dried red kidney beans
- 2 small ham hocks
- 2 tablespoons olive oil
- 3 tablespoons garlic, chopped
- 1 cup yellow onion, chopped
- 1 cup vidalia onion, chopped
- 1 cup red onion, chopped
- 1 cup celery, chopped
- 1/2 cup parsley, chopped
- 1 bay leaf
- 1/2 teaspoon thyme
- 1 teaspoon sugar
- 1 (14 1/2 ounce) can tomatoes, chopped
- 1 lb smoked sausage
- 1/2 lb ham
- 1/4 lb andouille sausage
- 1 quart chicken stock
- salt and pepper
Directions

1Soak beans overnight; drain.

2Chop meat; brown in oil.

3Add vegetables and garlic to meat; brown.

4Add spices; brown.

5Add beans and tomatoes and stock.

6Simmer till thick and beans are soft, 2-4 hours.

7Serve with rice.
