- 1 lb. dry small red beans
- 3 large onions, chopped
- 1 Tbsp. minced garlic
- 1/2 c. chopped fresh parsley
- 1/2 c. chopped green onions
- 1/2 tsp. crushed dried mint
- 1/4 c. bacon drippings, ham fat or oil
- ham bone or salt pork
- 8 to 10 c. ham stock, meat stock or water
- salt to taste
- ground cayenne pepper or hot sauce to taste
Directions

1In an 8-quart pot prepare the red beans and add enough stock to cover beans by 2 inches.

2Add the rest of the ingredients and simmer covered for 2 hours, stirring occasionally so the beans won't stick.

3Serve over cooked rice with chopped onion and hot peppers.
