- 1 lb. red beans, soaked overnight
- 2 large yellow onions, chopped
- 1 green pepper, chopped
- 4 garlic cloves, crushed
- 1 c. smoked ham
- 6 stalks celery, chopped
- 4 bay leaves
- 2 Tbsp. parsley
- 1/4 lb. margarine
- 2 Tbsp. Worcestershire sauce
- pepper
- 2 tsp. Tabasco
Directions

1Cover first 8 ingredients with water; simmer with lid off for 2 hours.

2Add the margarine, lots of pepper, the Worcestershire and Tabasco; cook another hour.

3Serve with hot, cooked rice. Doubled makes 6 quarts for freezing.
