- 1 bell pepper
- 1 stalk celery
- 4 cloves garlic
- 1 bunch green onions
- 1 c. chopped parsley
- 1 large ham hock
- 1 bay leaf
- 1 tsp. thyme
- salt and pepper to taste
- 1 large smoked sausage
- cooked rice
Directions

1Begin simmering beans in 1 1/2-quart saucepan.

2Saute the sausage and ham hock.

3Saute the vegetables in meat renderings until translucent.

4Add all remaining ingredients to beans and saute until tender approximately 2 hours.

5Keep covered with water.

6Mash some beans for creaminess.
