  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 rib celery, diced
  • 1 carrot, diced
  • 1 green pepper, diced
  • 1 cup brown rice
  • 1 (15 ounce) can kidney beans
  • 1 (14 ounce) can diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 2 teaspoons thyme
  • 2 teaspoons cumin
  • salt and pepper

    saute garlic and veggies until soft.

    add rice and spices, stir.

    add tomatoes and broth and bring to a boil.

    reduce and simmer until rice is almost done.

    add beans, salt and pepper.
