- 4 cans New Orleans Style kidney beans, undrained
- 3 stalks celery, sliced
- 1 medium onion, chopped
- 1/4 tsp. cayenne pepper
- 1/4 tsp. cumin
- 1 large can stewed tomatoes, mashed up
- 8 slices bacon, fried and crumbled (save grease)
- 1 lb. beef sausage, fried (or hamburger)
- picante sauce to taste
- salt and pepper to taste
- 1 green pepper, chopped
Directions

1Fry bacon; remove from pan to paper towel.

2In bacon grease, fry onions, green pepper and celery.

3Sprinkle in cayenne pepper and cumin.

4In a separate pan, fry sausage.

5Drain and discard grease.

6Stir in tomatoes and browned veggie mixture, including bacon grease.

7Heat to simmer.

8Stir in bacon and beans.

9Heat to simmer again.

10Add salt, pepper and picante sauce.

11Serve over rice.
