  • 1 medium size red cabbage
  • 3 Tbsp. butter
  • 6 Tbsp. sugar
  • 1 sour apple, grated
  • 1 c. red currant jelly
  • 1/4 c. vinegar or lemon juice
  • 1 c. water

    Wash cabbage.

    Remove outer leaves and core.

    Shred very fine in a heavy saucepan or kettle.

    Melt the butter with sugar.

    Mix in shredded cabbage, grated apple, jelly and vinegar.

    Blend thoroughly.

    Simmer and stir 10 minutes.

    Add 1/4 cup water at a time and let it evaporate each time.

    Cook and stir frequently for 30 minutes.
