Red Cedar Bean Soup

Ingredients

  • 1 lb. dried beans
  • 1 ham bone
  • 1 large minced onion
  • 1 rib minced celery
  • 2 minced carrots
  • 1 clove minced garlic
  • 2 Tbsp. butter
  • 1 large can tomatoes
  • 1 bay leaf
  • salt and pepper to taste
  • 2 tsp. horseradish

Directions

    Wash and sort beans; soak overnight in salted water (2 tablespoons).

    Drain and add 2 quarts water and ham bone or 2 hocks.

    Simmer for 3 hours.

    Saute in 2 tablespoons butter, the minced vegetables.

    Add the sauteed vegetables, tomatoes, bay leaf and seasonings.

    Simmer for 1 more hour.

    Remove bones and return meat.

    Add 2 tablespoons horseradish and serve.
