- 1 lb. dried beans
- 1 ham bone
- 1 large minced onion
- 1 rib minced celery
- 2 minced carrots
- 1 clove minced garlic
- 2 Tbsp. butter
- 1 large can tomatoes
- 1 bay leaf
- salt and pepper to taste
- 2 tsp. horseradish
Directions

1Wash and sort beans; soak overnight in salted water (2 tablespoons).

2Drain and add 2 quarts water and ham bone or 2 hocks.

3Simmer for 3 hours.

4Saute in 2 tablespoons butter, the minced vegetables.

5Add the sauteed vegetables, tomatoes, bay leaf and seasonings.

6Simmer for 1 more hour.

7Remove bones and return meat.
-
8Add 2 tablespoons horseradish and serve.
