- 2 (16 oz.) cans pitted tart cherries
- 3/4 c. sugar
- 1/4 c. plus 1 Tbsp. cornstarch
- 1/4 tsp. cinnamon
- 1/2 c. sugar
- 1 Tbsp. butter
- 1/2 tsp. almond extract
- 5 drops red food coloring
Directions

1Drain cherries, reserving 1 cup juice.

2Set cherries aside. Combine 3/4 cup sugar, cornstarch and cinnamon in a medium saucepan; stir mixture to remove lumps.

3Stir cherry juice into sugar mixture.

4Cook over medium heat, stirring constantly until smooth and thickened.

5Remove from heat.

6Stir in cherries, 1/2 cup sugar, butter and almond extract.

7Stir in food coloring. Bake at 425° for 45 to 55 minutes.

8Makes one 9-inch pie.
