- 10 medium mild red chilli, dried
- 10 medium hot red chilli, dried
- 1/2 cup water
- 2 tablespoon vinegar
- 1/2 large lemon
- 2 tablespoons garlic ginger paste
- to taste Salt
- 2 tablespoons extra virgin olive oil
- 1 whole chicken with slits cut in skin

1First make the chilli paste by adding the ingredients ( dried chillies, water and vinegar ) in a pan and letting it come to a boil, cook for 15 mins till red color comes out.

2Let the mixture cool.

3Now pour it in a grinder to blend to a paste.

4Now marinate the whole chicken in lemon, garlic ginger paste and salt for min 1 hour.

5In a cooking pot, add the olive oil and fry the marinated chicken for 15 mins.

6Then using a spoon apply red chilli paste generously all over and in between the slits.

7Now let it cook till chicken is fully cooked and juicy.

8Do not over cook.

9Serve warm.
