- 10 dried red New Mexico chiles
- 1/2 tsp. ground cumin
- 1/2 tsp. ground oregano
- 1 tbsp. vegetable oil
- 1/2 cup water
- 12 fresh corn tortillas
- Vegetable oil
- 1-1/2 cup cheddar cheese, shredded
- Grated raw onion (optional)
Directions

1Preheat oven to 350F.

2Place prepared chiles in blender; run at high speed.

3Add spices.

4Strain mixture through sieve or strainer and place in frying pan.

5Add oil to sauce and water if needed.

6Cook 15 minutes over medium heat.

7Fry tortillas just slightly in hot oil and drain on paper towels.

8Dip tortillas in sauce.

9Fill with cheese and grated onions, if desired.

10Place rolled tortillas in 11x2-quart shallow baking dish.

11Pour over remaining sauce and sprinkle with remaining cheese.

12Bake approximately 20 minutes.
