  • 1 tablespoon canola oil
  • 1 onion, finely chopped Safeway 3 lb For $2.99 thru 02/09
  • 200g peeled pumpkin, chopped
  • 2 sticks celery, chopped
  • 1 carrot, chopped Target 2 lb For $3.00 thru 02/06
  • 2 garlic cloves, chopped
  • 1 1/2 cups red lentils, rinsed
  • 5 cups water
  • 1 cup salt reduced chicken stock
  • 1/2 cup KRAFT FREE* Italian Dressing
  • 1/2 cup Italian parsley leaves, chopped
  • 1/4 cup coriander leaves, chopped
  • black pepper, to taste

Directions

    Heat oil in a large heavy based saucepan.

    Add onion, cook over medium heat until softened.

    Add pumpkin, celery, carrot and garlic.

    Cook a further 2-3 minutes.

    Add lentils, water and stock to the vegetables, bring to the boil, reduce heat and simmer for 10-15 minutes.

    Puree with blender until smooth.

    Stir in dressing, herbs and pepper.

    Return to the heat, and bring back to the boil, serve immediately.
