  • 3 1/2 c. red sweet peppers
  • 3 c. sugar
  • 1 tsp. salt
  • 2 c. vinegar

Directions

    Remove seeds and mid-ribs from peppers.

    Run through food chopper; measure.

    Sprinkle with salt.

    Let stand 3 or 4 hours. Add sugar and vinegar; cook until thick.

    Pour into hot jars. Seal at once.
