  • 6 red bell peppers, diced
  • 1 yellow onion, diced
  • 2 carrots, diced
  • 4 clove garlic, minced
  • 1 tbsp olive oil
  • 32 oz vegetable broth
  • 1 tsp dried thyme
  • 1/2 tsp red pepper flakes
  • 1/4 tsp cayenne pepper
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup half and half

Directions

    In stock pot, saute vegetables in olive oil until tender, about 10 minutes.

    Add broth and seasonings.

    Bring to a boil, then reduce heat and simmer 30 minutes.

    Puree soup, either with an immersion blender or in batches in a food processor.

    Add half and half and heat through.
