- 6 red bell peppers, diced
- 1 yellow onion, diced
- 2 carrots, diced
- 4 clove garlic, minced
- 1 tbsp olive oil
- 32 oz vegetable broth
- 1 tsp dried thyme
- 1/2 tsp red pepper flakes
- 1/4 tsp cayenne pepper
- 1/4 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup half and half
Directions

1In stock pot, saute vegetables in olive oil until tender, about 10 minutes.

3Bring to a boil, then reduce heat and simmer 30 minutes.

4Puree soup, either with an immersion blender or in batches in a food processor.
