  • 1 c. fresh red raspberries (freeze on cookie sheet; does better if raspberries are frozen)
  • 1/2 c. milk
  • 1/4 c. oil
  • 1 egg, beaten
  • 1 1/2 c. flour
  • 2/3 c. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. chopped pecans

Directions

    Combine egg, milk and oil.

    Sift together dry ingredients. Stir into liquid mixture until moistened.

    Quickly and gently, fold in raspberries and nuts. Bake at 400° for 20 to 25 minutes. Makes 12 muffins.
