- 5 slices bacon
- 1 md. onion, diced
- 2 cups tomatoes, chopped, seeded, and peeled
- 1 cup uncooked long grain rice
- 1 cup tomato juice
- water
- 1 cup finely chopped fully cooked ham
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. hot pepper sauce
Directions

1In a skillet, cook bacon until crisp.

2Remove bacon to paper towels to drain.

3Discard all but 2 tb of drippings.

4Saute onion in drippings until tender.

5Add bacon and remaining ingredients.

6Cook, covered, over medium-low heat for 10 minutes.

7Spoon into a 1 1/2 qt baking dish.

8Cover and bake at 350F for 45 minutes or until rice is tender, stirring occasionally.
