  • 1 30oz can crushed tomatoes
  • 1 6 oz can tomato paste
  • 12-16 oz hot Italian sausage
  • 1 large onion diced
  • 1 bell pepper diced
  • 8 oz mushrooms sliced
  • 1 head garlic minced
  • 8 tbs Italian seasoning
  • 4 tbs olive oil
  • 4 oz red wine

    ["Remove sausage from casings and cook in a large pot over medium high heat until browned. Break up pieces of sausage with wooden spoon.", "Add the olive oil.", "Add onion and pepper to oil and sausage stirring frequently until onion is soft, not browned.", "Add garlic stirring frequently for two minutes.", "Add mushrooms stir contents of pot until uniform, reduce heat to medium and cook until mushrooms have released their moisture, 10 minutes.", "Push contents of pot to sides and add tomato paste to center of pot, stirring tomato paste occasionally for 5 minutes or until paste releases its aroma.", "Add crushed tomatoes, tomato sauce, red wine and Italian seasonings, stir to combine.", "Cook over medium heat until sauce bubbles then reduce heat to low for 2 hours stirring occasionally to prevent any sticking on bottom.", "Seasoning note: In season I use fresh basil, oregano and thyme.
