- 1 bunch, about 320 grams Red shiso leaves
- 100 grams Sugar
- 100 ml Grain vinegar
- 1500 ml Water
Directions

1Rinse well, then tear the leaves apart.

2Discard the stalks.

3In a pot (do not use aluminum), boil 1500 ml of water, then add the shiso leaves and simmer for 7 to 8 minutes, stirring occasionally with chopsticks.

4Line a colander with a paper towel, then strain the juice from Step 2, and return to the pot.

5Add 100 g sugar to the pot, then heat.

6The juice should be a dark red color.

7Add 100 ml vinegar, and the color should become more reddish.

8It's ready after it comes to a boil.

9Skim any scum that rises.

10Drink after cooling.

11Store in the refrigerator.

12If you store the shiso juice in the used up bottle of vinegar, it will last longer.
