  • 5 lb. red snapper fillets
  • salt and pepper
  • 4 Tbsp. lemon juice
  • 2 Tbsp. butter
  • 1/2 c. chopped celery
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 12 oz. can V-8 juice

Directions

    Place fillets in large buttered baking dish.

    Season with salt and pepper.

    Sprinkle 2 tablespoons of lemon juice and dot with 1 tablespoon of butter.
