- 1/2 c. chopped onion
- 1/2 c. chicken broth
- 2 c. canned pinto beans, rinsed and drained or fresh-cooked
- 2 Tbsp. chili powder
- 2 to 3 tsp. ground cumin
- 1/2 tsp. salt
- 1/8 tsp. ground pepper
- 1/2 c. salsa (mild or spicy)
Directions

1Heat chicken broth in a 10-inch non-stick skillet over medium heat until hot.

2Add chopped onions and cook until soft.

3Add pinto beans; cook, stirring occasionally, 5 minutes.

4Mash beans; stir in chili powder, salsa, cumin, salt and pepper.

5Add more chicken broth to skillet, if necessary.

6Cook and stir until a smooth paste forms, about 5 minutes.

7Garnish with grated Cheddar cheese melted on top.
