  • 1 tbsp. olive oil
  • 1 small onion
  • 1 clove garlic
  • 2 c. cooked pinto beans
  • 1/2 tsp. salt

Directions

    In 10-inch skillet, heat olive oil over medium heat.

    Add minced onion and garlic and cook, stirring frequently 4 minutes, or until onion is tender.

    Add cooked pinto beans.

    Mash beans lightly with potato masher or large spoon until slightly lumpy and stir in salt.

    Cook, stirring frequently 5 minutes, or until beans are heated through.
