Ingredients
- 2 cup pinto beans
- 4 clove garlic
- 1/2 tsp salt
- 3/4 cup oil
Directions

1Cover beans with warm water.

2Leave in a warm place for 12 - 24 hours.

3Beans will swell, so make sure your container has room for expansion.

4Drain, rinse, and place beans in a large pot.

5Add water to cover beans.

6Bring to a boil and skim off foam.

7Reduce heat and add optional garlic and salt.

8Simmer, covered, for 4 - 8 hours.

9Check occasionally and add more water as necessary.

10Mash bean with a potato masher (I prefer to blend them in my food processor for a smooth consistency).

11Heat oil of your choice (lard, coconut oil, bacon grease, etc.)

12in a cast iron skillet.

13Add beans and cook, stirring constantly, over medium heat, until all the fat is incorporated.
