- 1 tablespoon vegetable oil
- 1 small onion, diced
- 1 garlic clove, minced
- 2 cups black beans (see recipe above)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/4 teaspoon cayenne pepper or to taste
- Salt
- 1/2 cup grated Jack cheese
Directions

1Heat vegetable oil in a medium ovenproof skillet and saute onion and garlic until translucent.

2Add beans with cooking liquid and mash with a fork or potato masher, or process in food processor.

3Stir in chili powder, cumin, cayenne pepper.

4Season with salt.

5Top with cheese and place under the broiler for about 3 to 5 minutes or until cheese is melted and bubbling.
