- 3 cups Dry Black Beans
- 1/2 whole Onion, Chopped
- 2 cloves Garlic, Chopped
- Olive Oil
- 1 cup Water, Plus More For Boiling Beans
- 1 Tablespoon Salt
- 1 Tablespoon Pepper
- 1- 1/2 teaspoon Smoked Paprika
- 1 teaspoon Garlic Powder
- 1- 1/2 teaspoon Cumin
- 1/2 teaspoons Cayenne Pepper
Directions

1Rinse black beans in a strainer.

2Place the beans in a large pot and cover with 2 1/2 to 3 inches of water.

3Bring the beans to a boil then reduce heat to a simmer.

4Cover and let simmer for 2 to 3 hours, until tender.

5When the beans are ready, remove them from the pan and strain them.

6Meanwhile, in a pot large enough to accommodate the beans, saute onion and garlic in oil until the onions become translucent.

7When the onions and garlic are done, stir in the beans to the mixture along with the water.

8Using an emulsion blender (or potato masher if you dont have one), blend the beans until mostly smooth.

9Continue to cook at low heat while adding the spices, adjusting to taste as necessary.

10Makes 3 pints.
