Ingredients

  • 1/2 c. cider vinegar
  • 1/3 c. green peppers, red pepper or can of pimentos
  • 1 tsp. mustard seed
  • 3 stalks chopped celery
  • 1 c. sugar
  • 1 tsp. salt
  • 2 1/2 c. water
  • 1 tsp. celery seed
  • 1 qt. shredded cabbage

Directions

    Bring to boil the vinegar, 1/2 cup water, sugar, celery seed and mustard seed.

    Let get cold.

    Make a brine of 2 cups water and salt.

    Soak cabbage and pepper in brine for half hour.

    Drain off brine, pressing to remove most of brine.

    Add to vinegar mixture with celery.

    Add salt to taste.

    Stir well and store in refrigerator.

    Use as needed.

    Will keep well for 3 to 6 months.
