Ingredients

  • 2/3 c. margarine
  • 1 c. mashed potatoes
  • 1/2 c. sugar
  • 1 1/2 tsp. salt
  • 1 c. scalded milk
  • 1 egg or 2 egg whites
  • 1 yeast cake or 1 pkg. yeast
  • plain flour (enough for stiff dough)

Directions

    Add yeast to potato water to dissolve.

    In a good size bowl, put shortening, sugar, salt, mashed potatoes, milk and egg; beat well.

    Add yeast and flour (enough for stiff dough).

    Cover and let set overnight in refrigerator.

    Take out for few minutes.

    Roll out, place on pan.

    Let rise 1 1/2 to 2 hours.

    Bake in 400° oven. Will make about 60 rolls.
