Ingredients

  • 2 pkg. yeast
  • 1 c. lukewarm water
  • 3 tsp. salt
  • 1 c. sugar
  • 1/4 c. instant mashed potatoes, moistened with water to make 1/2 c. potatoes
  • 1 pt. milk
  • 2/3 c. shortening
  • 10 c. bread flour

Directions

    Pour yeast into water and let stand 5 minutes.

    Scald milk; add sugar and salt.

    Let cool.

    When lukewarm, add to yeast; add 1/2 flour and potatoes.

    Beat until smooth.

    Add shortening and rest of flour to make soft dough.

    May need to knead a few minutes.

    Let set in warm place until double in size.

    Knead dough and refrigerate; cover with wax paper or plastic bag.

    Two hours before needed, shape in rolls.

    Let rise.

    Bake at 375° for 15 to 20 minutes or until golden brown.

    Take out of oven and brush with butter.
