Ingredients

  • 3 qt. tomatoes, peeled and chopped
  • 2 c. chopped celery
  • 2 c. chopped onions
  • 1 c. green bell pepper
  • 1/4 c. salt
  • 3 small hot peppers (if desired)
  • 2 c. granulated sugar
  • 1/4 c. brown sugar
  • 1 tsp. black pepper
  • 1 1/2 tsp. pickling spice, tied in cloth
  • 1 c. white vinegar

    Combine vegetables and salt; let set overnight.

    Drain, but do not press down.

    Mix remaining ingredients and add to vegetable mixture.

    Bring to rolling boil, uncovered.

    Reduce to simmer for 15 minutes.

    Pack in jars and seal in boiling water process for 10 minutes.

    Yield: 5 or 6 pints.
