Ingredients

  • 3 c. greens, cooked (or canned)
  • 3 Tbsp. margarine
  • 6 eggs
  • 1/2 c. cheese, finely cut up or shredded
  • salt and pepper to taste

Directions

    Drain liquid from greens into pan.

    Cook liquid until only a little is left in pan.
  3. 3
    Add greens, salt, pepper and margarine and bring to boiling.
  4. 4
    Break eggs on top of greens and sprinkle with cheese.

    Cover and cook slowly until eggs are done and cheese is melted.

    Serves 6.
