  • 4 c. rhubarb, diced
  • 1 1/2 c. sugar
  • 2 Tbsp. cornstarch
  • 1/4 c. water
  • 1 tsp. vanilla
  • 1 1/2 c. oatmeal
  • 1 1/2 c. flour
  • 1 c. brown sugar
  • 1/2 tsp. soda
  • 1 c. shortening
  • 1 c. chopped nuts (optional)

Directions

    Mix ingredients together until crumbly.

    Put 3/4 of mixture in a 9 x 13-inch pan.

    Pour rhubarb mixture over this, then add remaining crumbs.

    Bake at 375° for 30 to 35 minutes.
