- 2 3/4 c. flour
- 1 1/2 c. brown sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 1 egg
- 1 c. buttermilk
- 1/2 c. cooking oil
- 1 tsp. vanilla
- 1 c. finely chopped rhubarb
- 2 Tbsp. flour (to coat rhubarb)
Directions

1Grease two 8 x 4 x 2-inch loaf pans.

2In large mixing bowl, stir flour, brown sugar, baking soda and salt.

3In mixing bowl, combine egg, buttermilk, oil and vanilla.

4Stir into dry ingredients; mix well.

5Toss rhubarb with 2 tablespoons flour; fold rhubarb into batter.

6Pour into pans.

7Dot each loaf with butter and sprinkle with 2 to 3 teaspoons sugar.

8Bake at 350° for 55 minutes or until toothpick comes out clean.

9Cool in pans. Remove.
