Rhubarb Bread Pudding

- 8 slices bread
- 1 1/2 c. milk
- 1/4 c. butter
- 5 eggs, slightly beaten
- 1 1/2 c. brown sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 2 c. diced rhubarb
- 1/2 c. firmly packed brown sugar
Directions

1Trim crusts from bread, then toast slices.

2Cut toast into 1/2-inch cubes.

3Place them in 1 1/2-quart casserole.

4Scald milk in saucepan.

5Add butter and stir until melted.

6Pour over toast cubes and let stand 15 minutes.

7Combine eggs, sugar, cinnamon, salt and rhubarb.

8Stir into bread mixture.

9Sprinkle top with brown sugar.

10Bake at 300° for about 50 minutes or until set.

11Top with half and half or ice cream.
