- 1/2 c. margarine
- 1 1/2 c. brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 c. buttermilk
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 1/2 c. flour
- 2 c. chopped rhubarb (or more!)
Directions

1Blend margarine, brown sugar, egg and vanilla in a large bowl. Mix dry ingredients in a separate bowl. Put dry ingredients into margarine/sugar mixture.

2Add buttermilk.

3Mix well. Stir in rhubarb. Spread into greased and floured 9 x 13-inch pan. Sprinkle with mixture of 1/4 cup white sugar and 1 teaspoon of cinnamon. Bake at 350° for 45 minutes or until toothpick comes out clean.
