- 4 c. fresh diced rhubarb
- 1 c. sugar
- 1 c. chopped nuts
- 1 c. salad oil
- 1 tsp. vanilla
- 2 c. all-purpose flour
- 2 eggs, beaten
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1 c. raisins (optional)
- 1/2 c. sour cream
Directions

1In a bowl, coat rhubarb pieces with sugar; set aside.

2In a large bowl, stir remaining ingredients together; mix well.

3Stir in coated rhubarb pieces.

4Turn mixture into lightly greased and floured 9 x 13-inch pan.

5Bake at 375° for 40 to 45 minutes or until inserted toothpick comes out clean.

6Serve cold, plain or with whipped cream.
