  • 4 c. fresh diced rhubarb
  • 1 c. sugar
  • 1 c. chopped nuts
  • 1 c. salad oil
  • 1 tsp. vanilla
  • 2 c. all-purpose flour
  • 2 eggs, beaten
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 c. raisins (optional)
  • 1/2 c. sour cream

    In a bowl, coat rhubarb pieces with sugar; set aside.

    In a large bowl, stir remaining ingredients together; mix well.

    Stir in coated rhubarb pieces.

    Turn mixture into lightly greased and floured 9 x 13-inch pan.

    Bake at 375° for 40 to 45 minutes or until inserted toothpick comes out clean.

    Serve cold, plain or with whipped cream.
