- 1 c. flour
- 1 stick butter
- 1 Tbsp. sugar
- 3 c. fresh rhubarb, cut into 1-inch pieces
- 1 1/4 c. sugar
- 2 Tbsp. flour
- 3 egg yolks
- 1 c. whipping cream
- 3 egg whites
Directions

1Blend the first 3 ingredients.

2Press into an 8 x 8-inch baking dish.

3Bake at 350° for 8 to 10 minutes.

4Cool.

5Cook the rhubarb, 1 1/4 cups sugar, 2 tablespoons flour, egg yolks and whipping cream over low heat until thick, stirring regularly.

6Pour on cooled crust.

7Use the 3 egg whites to make meringue.

8Put meringue on hot ingredients; seal edges.

9Bake at 350° for 8 to 10 minutes.
