  • 5 c. rhubarb, diced
  • 1 c. sugar
  • 1 pkg. white cake mix
  • 3 oz. raspberry gelatin powder
  • 3 c. miniature marshmallows
  • 2 eggs
  • water (as needed for mix)

Directions

    Arrange rhubarb in bottom of 9 x 13-inch pan. Sprinkle with sugar and gelatin (jello). Cover with marshmallows. Prepare cake mix, using 2 eggs and required amount of water. Spread batter over mixture. Bake at 350° for 50 to 55 minutes. Serve warm with whipped cream.
